Update custom fields on a customer

Sets values for one or more user-defined custom fields on a contact. Each key must match an existing custom field definition — unknown keys are silently ignored. Values are validated against the field's type and (for SELECT/MULTI_SELECT) its options. Passing null clears the field; clearing a field marked isRequired returns a validation error. The change is recorded on the contact timeline.
